Pumpkin Spice Overnight Oats


Serves 1

  • 100g butternut squash, peeled and grated (150g)
  • 170ml skimmed milk
  • 50g rolled oats
  • 25g maple syrup
  • 25g protein powder, vanilla or unflavoured
  • ¼ tsp ground cinnamon
  • 1 pinch ground nutmeg
  • 10g pecans, chopped


Tip the butternut squash into a bowl, add 2 tbsp water then cover and microwave for 5 minutes until soft. Leave to cool slightly then tip into a bowl and mash with the back of a fork. Add the milk, oats, maple syrup, protein powder and spices then stir together. Cover the bowl and chill overnight.

When ready to eat, give the mixture a good stir before topping with the pecans.

  • You can use pumpkin here instead of butternut squash if you wanted to be even more halloweeny.
