Slow Cooker Sticky BBQ Ribs with Slaw

Ingredients

Serves 4

  • 1kg baby back ribs
  • 300ml BBQ sauce

For the slaw

  • 2 carrots, peeled and shredded
  • 200g red or white cabbage, or a mix of both, shredded
  • juice of 1 lime
  • 1 small bunch of parsley
  • 60g yoghurt, such as greek, natural, soya
  • salt and pepper

Tip: For even extra flavour, rub the ribs with 1 tsp ground cumin, 1 tsp paprika and 1 tsp dried mixed herbs before placing in the slow cooker.

Total time: 4 hours 20 minutes

Method

Add the pork ribs to the slow cooker and add 100ml water. Cook on high for 4 hours.

Prepare the slaw by mixing all the ingredients together and seasoning to taste.

Once the ribs are cooked through, heat the oven to 200°C. Place the ribs on a baking tray and rub over most of the BBQ sauce. Place in the oven for 10-15 minutes. Serve with the remaining BBQ sauce and the slaw.

Tip: All slow cookers vary from each other and so might your cook times – always make sure any meat is hot throughout.
