Curried Potato Soup
This hearty soup is packed full of veggies – and is so tasty, too.
Put the butternut squash into a heatproof bowl with a splash of water, cover and microwave for 3-4 minutes until soft then set aside to cool.
Once cooled, add to a blender along with the rest of the ingredients and blitz until smooth.
