Chilli Wraps

Ingredients
- ½ tsp olive oil
- ½ onion, peeled and finely chopped
- 1 clove garlic, peeled and crushed
- 120g 5% fat beef mince
- ½ tsp ground cumin
- ¼ tsp chilli powder or paprika
- ¼ tsp cayenne pepper
- 130g tinned chopped tomatoes
- 60g tinned black beans, drained
- salt and pepper
- 2 mini tortilla wraps
- ½ small bunch coriander, leaves torn
- 20g soured cream
Method
Heat the oil in a frying pan over a medium to high heat. Fry the onion and garlic for a few minutes before adding the mince and spices. Cook for 3-4 minutes until the meat is brown and the are spices fragrant. Stir through the tomatoes and beans.
Simmer for 5 minutes or until the mixture has thickened and the meat is cooked through. Season to taste then spoon into the wraps and top with the coriander and soured cream.
Tips
The mince mixture is easy to scale up and freeze. Make an extra batch to get ahead on some meal prep.
