Thai Turkey Burger with Slaw

Ingredients

Serves 1

  • 140g turkey breast mince
  • 1 1/2 tsp Thai red curry paste
  • 1 1/2 tsp coconut oil
  • 1/2 red onion, peeled and chopped
  • 1/2 red chilli, finely sliced
  • 1/2 carrot, peeled and shredded
  • 100g red or white cabbage, or a mix of both, shredded
  • 50g fresh mango, thinly sliced
  • 1 squeeze lime juice
  • Small bunch coriander, chopped
  • 1 pinch of salt
  • 1 burger bun

Method

Mix the turkey mince and curry paste together in a bowl then shape into a thick patty, slightly wider than the burger bun. Heat the coconut oil in a non-stick frying pan over a medium to high heat and fry the burger for 7-8 minutes, turning regularly, or until cooked through. Transfer to a warm plate to rest.

Meanwhile mix together the onion, chilli, carrot, cabbage, mango, lime juice and coriander in a large bowl with a pinch of salt and allow the vegetables to soften.

Layer the burger in the bun with some of the slaw and sandwich together. Serve with the extra slaw on the side.
