Summer Lemonade Ice Lollies


Serves 6

  • 100g caster sugar
  • 120ml lemon juice (around 4 to 5 lemons)
  • 480ml water
  • A few sprigs of mint


Heat a saucepan over a medium to high heat. Add the sugar and half of the water and stir until the sugar has dissolved.

Remove from the heat and add the rest of the water, the lemon juice and the mint. Leave to cool completely.

Remove the mint leaves from the mixture then pour into 6 ice lolly moulds and freeze overnight or until fully set.

  • If you don't have ice lolly moulds, you could use empty yoghurt pots or silicone cupcake moulds. Just leave them to freeze for an hour or so, then press a lolly stick into the mix, and return to the freezer until set.
