In a large bowl, carefully mix the halloumi, fajita seasoning and oil together.
Preheat a griddle pan over a high heat or get the BBQ nice and hot. Cook the halloumi for a minute on each side or until cooked through and charred.
Mix the quark with the lime zest and juice and season to taste.
Finely chop the tomatoes and coriander then stir together with some salt and pepper.
Add the lettuce to the tortilla wraps then pile everything else on top to serve.
