Smashed Eggs with Avocado and Chilli


Serves 1

  • 3 large eggs
  • 1 tsp butter
  • Pinch smoked paprika
  • Pinch chilli flakes
  • 45g avocado, peeled, pitted and diced
  • ½ lime, juice
  • 1 slice rye bread, toasted
  • Small bunch coriander, chopped
  • 10g pumpkin seeds


Bring a pan of water to the boil, add the eggs then boil for 6 minutes or until cooked to your liking. Drain the eggs, run under cold water for a minute then peel and set aside.

Melt the butter with the spices in a small saucepan or in the microwave.

Toss the avocado in the lime juice, spoon on top of the toast then break the eggs up over the top. Scatter over the spiced butter, coriander and pumpkin seeds then serve.
