Greek Pasta Salad


Serves 1

  • 60g orzo pasta
  • 2 tsp red wine vinegar
  • 1 garlic clove, peeled and crushed
  • 1 tsp dried oregano
  • 80g tinned chickpeas, drained
  • 80g cherry tomatos, halved
  • ¼ cucumber, diced
  • ½ red onion, peeled and diced
  • ½ green pepper, deseeded and chopped
  • 60g feta, crumbled
  • 35g pitted kalamata olives


Bring a large pan of salted water to the boil, add the orzo and cook according to the packet instructions. Drain and rinse under cold water until completely cooled.

Meanwhile whisk the vinegar, garlic and oregano together in a large bowl then add all the remaining ingredients. Add the cooked pasta, toss everything together and serve.
