French Toast with Crispy Bacon


Serves 1

  • 1 medium egg
  • 2 egg whites
  • 60ml skimmed milk
  • 1 pinch salt
  • 1 pinch ground cinnamon
  • 2 slices wholemeal bread
  • 2 rashers lean smoked back bacon
  • ½ tsp olive oil
  • 20g maple syrup


Preheat the grill to high. Whisk the egg, egg whites, milk, salt and cinnamon together in a large, wide bowl until smooth then add the bread. Gently push down to soak in the mixture then set aside for 5 minutes, flipping over halfway through.

Meanwhile slide the bacon under the grill and cook for a couple of minutes on each side until crisp.

Heat the oil in a non-stick frying pan, add the soaked bread and fry for 2 minutes on each side, or until golden. Transfer to a plate, top with the bacon and drizzle over the maple syrup to serve.

  • This recipe works best if the bread is a little dry, so leave it out overnight on a wire rack or a plate.
